Cathy
Corison started her passion for wine at Pomona College and then an M. S. in
Enology from UC Davis. Twenty years of wine making for others including 10 years
a Chappellet and working with diverse vineyards all over Napa gives her the
best insight as to where the best fruit for blending her wonderful Cabernet.
They are all located along the western benchland, centered around Rutherford,
where deep, stony alluvial soils promote the ideal growing conditions for the
Cabernet vine.
Corison Winery creates two limited-production Napa Valley Cabernet Sauvignons.
Thirty-year-old vines located on the winery estate yield grapes that are known
for their intense brooding plum, cassis and blackberry flavors. The Corison
Cabernet Sauvignon takes advantage of the natural range of flavors possible
in Cabernet grapes grown on different sites within the Napa Valley. Corison
draws upon these wonderful natural resources to fashion a wine that epitomizes
her personal style. Her Cabernet is juicy with fruit and hints of violets, olives
and spice. They are fresh and lively on the palate, never ponderous. Supple
and decidedly drinkable as a young wine, it is structured for a decade or more
of bottle development. Half of the small French oak barrels used to age each
vintage are new, sources from the center of France.
The images on the label are very old life symbols, one based on rain and the
other on a sprouting seed. They embellished vases excavated from the site of
one of our earliest European cultures to cultivate grapes and make wine over
7,000 years ago.
