In
1987, Michel Colin, the third generation of his family to make wines in Chassagne-Montrachet,
was given part of the Chenevottes acreage by his uncle, the highly respected
Georges Deléger. He has been making Chassagne-Montrachet under his own
name ever since from this fine premier cru vineyard, one of the best producers
of Chassagne-Montrachet.
VINIFICATION
Grapes are sorted both in the vineyard and at the winery, then gently broken
before being pneumatically pressed. Fermentation begins with the natural yeasts
in regulated stainless steel tanks. This is followed by racking only in years
when rot is present. During fermentation the must is decanted into 20% new oak
barrels (Vosges and Alliers). The wines undergo malolactic fermentation and
may be kept on the fine lees until the end of July, depending on the vintage,
to be bottled in September.
STYLE
Distinguished wines with lots of ripe fruit aromas, concentrated flavors and
complexity.
