I
consider Cafaro wines my personal statement. It is my intention
to make elegant, balanced wines of classic proportions and grace that age well
and, better still, drink well.
Before founding Cafaro Cellars in 1986, I made wine at several other wineries
and remain a consultant today. Having worked in the Napa Valley for 30 years,
I know where to find the type of grapes I need, and by blending grapes from different
regions within the valley, the end result is wines of great depth and complexity.
I see my winemaking as traditional in form and modern in execution. I pump
the fermenting juice over the cap to extract the most from the fruit, ferment
in stainless steel to control temperature and age the young wine in small French
oak barrels, followed by an additional year in the bottle prior to release. --

Cafaro purchases grapes from Truchard
Vineyard in Los Carneros at the southern tip of the Napa Valley and both Schweiger
and Richard's Vineyards at the top of Spring Mountain northwest of St. Helena.
In 1996, we began clearing and planting a new 14-acre vineyard in the eastern
hills of Napa Valley just south of the Stags Leap
appellation, a new planting area for Cafaro, but one with great potential.
The '99 harvest delivered our first crop of Syrah from this vineyard and quality
looks excellent.
